Sweet Garlic Aioli

July 24, 2007

Substitute 1/2 cup of mayonnaise if you don’t want to use egg yolks.

1 cup sweet sherry

6 garlic cloves

2 tbsp. sherry vinegar

2 egg yolks

1 cup olive oil

Salt and pepper to taste

Place sherry and garlic in a pot over low heat and cook until caramelized and syrupy.  Blend together sherry/garlic shyrup, sherry vinegar and egg yolks in a food processor.  Slowly add olive oil to emulsify.  Season.

Makes about 2 cups.

Creme Catalan

Supposed to be easier to make than flan.

3 cups milk

1 3-inch cinnamon stick

Rind of a small lemon, cut in strips (use vegetable peeler)

7 egg yoks

3/4 cup granulated sugar

3 tbsp. cornstarch

Topping:

1/3 cup granulated sugar

Heat milk, ciannamon stick and lemon rind together in a pot over medium heat.  Bring to a boil, reduce heat and let simmer for 5 minutes.  Remove from heat.

Cool and strain milk, discarding cinnamon and lemon.  Reserve.

Whisk together egg yoks and sugar until well incorporated.  Add 2 1/2 cups reserved milk and whisk together.

Dissolve cornstarch in remaining milk.

Place milk-yolk mixture in a pot and stir in cornstarch mixture.  Bring to boil over medium heat, stirring continuously for about 8 minutes or until mixture thickens.

Pour into 6 custard cups and refrigerate until needed.

Preheat broiler.

Divide sugar between the 6 cups and sprinkle over custard.  Place cups on a baking sheet and place under broiler.  Brol for about 2 minutes or until brown and bubbling.  Serve immediately.

Serves 4.

Rainbow Bridge

July 22, 2007

Kodi (December 24, 1990 - July 11, 2007), another old dog, is memorialized by his family in this week’s Squamish Chief.  They included the following lovely tribute:

Rainbow Bridge

Just this side of heaven is a place called Rainbow Bridge.

When an animal dies that has been especially close to someone here, that pet goes to Rainbow Bridge.

There are meadows and hills for all of our special friends so they can run and play together.  There is plenty of food, water and sunshine, and our friends are warm and comfortable.

All the animals who had been ill and old are restored to health and vigor; those who were hurt or maimed are made whole and strong again, just as we remember them in our dreams of days and times gone by.

The animals are happy and content, except for one small thing; they each miss someone very special to them, who had to be left behind.

They all run and play together, but the day comes when one suddenly stops and looks into the distance.  Their bright eyes are intent; their eager body quivers.  Suddenly they begin to run from the group, flying over the green grass; their legs carrying them faster and faster.

You have been spotted, and when you and your special friend finally meet, you cling together in joyous reunion, never to be parted again.  The happy kisses rain upon your face, your hands again caress the beloved head, and you look once more into the trusting eyes of your pet, so long gone from your life but never absent from your heart.

Then you cross Rainbow Bridge together.

federal and provincial rebate website: buying a new energy efficient car

July 21, 2007

Here is the federal rebate website that provides refunds of $1000. to $2000. if you purchase a new energy efficient car (see http://www.tc.gc.ca/programs/environment/ecotransport/ecoauto.htm#2007vehicleflexfuel).  Provinces also had an additional rebate and the websites are listed in the Q & A.  I must say I did wonder how some of these vehicles ie. the LEXUS 4 by 4 is considered fuel efficient but I don’t know much about cars.

“Psychologists in Torture of Military Detainees Requires Emergency Reform of American Psychological Association, Says Coalition of Psychologists”

July 18, 2007

By CounterPunch Newswire

Today’s deeply disturbing revelations in Vanity Fair show the essential role US psychologists played in the torture of detainees in CIA and Department of Defense (DoD) custody, heightening the urgent need for the American Psychological Association (APA) to issue clear ethical guidelines prohibiting psychologists in the military or intelligence services from violating basic human rights as part of interrogation processes, the Coalition for an Ethical APA stated. “Oaxaca on Edge” by By SCOTT LIEBERTZ (counterpunch.org url)

July 20, 2007

"We’re Not Going to Allow Ourselves to be Stepped Upon"

The Mexican state of Oaxaca is once again in the grips of heightening tension as the famous Guelaguetzla festival approaches and a large segment of the population is planning a boycott and some fear that disgruntled activists hope to sabotage it. Oaxaca was once again in the news on Monday after an attempt to celebrate a "Guelaguetza Popular" was violently put down by police. But the unrest here is about much more than just rescuing an indigenous festival from corporate cooptation. Thousands of Oaxacans are still fuming about their corrupt governor and the impunity of those who killed more than a dozen protestors last year.
